World's Best Meatloaf!!!

We bought one of those discount ground beef packs at Meijer...the ones that are going to expire in a couple of days, so we had to figure out something to do with it quickly. Eric suggested meatloaf, which I've never made before, and don't have a recipe. So I looked up a couple of recipes, adapted them a little, because I do that, and ended up making the most delicious meatloaf we've ever had in our lives!

Jasmine's most delicious meatloaf ever!

2-ish pounds of ground beef (lean ground turkey would be much healthier)
1 little can (5.5 fl oz) of V8
3/4 cup oatmeal (we have instant, it probably doesn't matter since it cooks for so long)
1 egg
1/2 a medium onion, roughly chopped (I chopped it roughly because it was making my eyes water and the onions got tender and juicy in the meatloaf and Eric said that was his favorite part)
A generous grinding of pepper

Mix this up in a bowl, and I put it into a pie plate, since we don't have a loaf pan, but this way you can serve it in wedges instead of slices, which was kind of cool. After I patted it down evenly, I put a generous layer of barbecue sauce on the top. We used Sweet Baby Ray's, which we got at Costco and is sooo good. Since I have the meat thermometer I didn't set the oven timer, but it took about an hour to cook at 350.

I remembered to drain the grease into a can this time (I just learned that) but unfortunately, I accidentally missed the can. I'll work on that next time :) Then I let it set for awhile, and when we couldn't wait anymore, it was time to dig in!
