1 onion, chopped
2 cloves garlic, chopped
1 block tofu, cut into bite sized pieces
1 can chickpeas
frozen veggies (we used broccoli and spinach)
curry powder
rice
Saute the onion and garlic, add the tofu, frozen veggies, and chickpeas, and a tsp (more to taste, ours was really strong) of curry powder. Stir until heated through, serve over rice.
