Stuffed Green Peppers

4 green peppers (or another color)
1 lb ground beef
1 cup quinoa or brown rice, cooked
1 medium onion, diced
2 cans diced tomatoes
Ground pepper

Mix beef, quinoa, onion, and 1/2 can diced tomatoes. Wash peppers, cut off tops, remove seeds, and stuff with mixture. Place in a baking dish, and po
ur the rest of the tomatoes over the peppers. 

Cook at 350. We put our meat thermometer in one to tell us when it was done, it was about an hour and 15 minutes but we had really huge
 peppers.
