Wash the beets really well and cut into evenly sized pieces
Put them in a baking dish (we used a pie plate)
Put water in the dish to just cover the bottom
Cover with foil
Bake at 425 for 25-40 minutes or until they pierce easily (its like checking to see if a potato is done)
Sprinkle with salt and pepper, or other seasoning (I ate my first couple plain, they're great like that too!) Next I want to do sweet potatoes at the same time...I think that will be pretty (and healthy!)
