Polenta
I made half a batch of polenta from the Bob's Red Mill bag, as directed on the bag. I find that it only takes about 20 minutes instead of the 30 it says, maybe thats because I'm making less?
Pour it from the pan into a bowl and let it sit for a while to set. Invert it onto a plate.
Meanwhile, in a pan, either heat up store bought spaghetti sauce, or start with a can of diced tomatoes and add Italian seasoning, chopped onion, garlic, parsley, a little bit of flour and lots of black pepper and simmer until it gets saucy.
Pour the sauce over the polenta and cut it into slices to serve. You could do this as the main dish with a big salad, or as a side dish with some meat.

Thanks! After the fact I realized it would be even cuter to get little bowls and make individual polentas! I'll try that next time.
